2 cans black eyed peas 1/2 cup chopped celery 1/2 cup diced red onion 3 cloves minced garlic 1 cup corn (I use frozen...it's not as wet) put into bowl or container and toss together
dressing: 1/4 cup rice wine vinegar 1/8 cup apple cider vinegar 1/3 cup light veg. oil 1/2 tsp ground mustard (it's an emulsifier..ask Alton!) 1 tbsp sugar or splenda 1 tsp dried dill pinch of cumin a grind of kosher salt and fresh pepper
Whisk together and pour over black eyed pea mixture... mix all together. Let marry overnight. Yummers. Eat. Yummers. I eat it plain, I mix in salads, I use in wraps. It gets better as it ages. If it grows fuzz, you've let it sit too long. I have never let it sit too long though.
