Cowboy Soup
1 & ½ lb of lean ground beef 1 cup chopped onion 2 Tb vegetable oil 1 envelope taco seasoning mix 1 envelope ranch salad dressing mix 1 (14 oz) can diced tomatoes 1 (10 oz) can tomatoes w/green chiles 1 (8 oz) can tomato sauce 1 (14 oz) can pinto beans 1 (14 oz) can red kidney beans 1 (14 oz) can whole kernel corn
Brown the ground beef and onion in the oil, stirring until the ground beef is crumbly; drain. Transfer to large soup pot.
Stir in the seasoning and salad dressing mixes.
Add all the canned ingredients without draining.
Cook over low heat for approximately one hour to blend flavors.
Serve over rice, corn chips, or tortilla chips. Garnish with sour cream and shredded cheese if desired.
