If I have posted this before, all I can say is it bears repeating:
Cowboy Soup
1&1/2 pounds ground beef
1 cup chopped onions
2 tablespoons vegetable oil
1 envelope taco seasoning mix (dry)
1 envelope ranch salad dressing mix (dry, in the salad dressing aisle)
1 (14-oz) can diced tomatoes
1 (10-oz) can tomatoes with green chilies (Rotel)
1 (8-oz) can tomato sauce
1 (14-oz) can pinto beans
1 (14-oz) can red kidney beans
1 (14-oz) can of black beans
1 (14-oz) can of whole kernel corn
(don’t drain any of the canned beans and corn—dump in the entire contents of the can)
1)Brown the ground beef with the onion in the oil in a skillet, stirring until the ground beef is crumbly; drain.
2)Stir in the taco seasoning and salad dressing mixes. 3)Add diced tomatoes, tomatoes with green chilies, tomato sauce, pinto, kidney and black beans, and corn and mix well.
4) Cook over low heat for 1 hour or in a crock pot for on low for 2-3 hours or until hot and flavors blended.
Serve over rice, corn chips or tortilla chips if desired. Garnish with sour cream and shredded Mexican blend cheese if desired.
(makes 8 servings)
